MINI pumpkin-orange olive oil cakes

ingredients
•1 cup all-purpose flour
•1 tsp. baking powder
•1?2 tsp. baking soda
•1?2 tsp. salt
•1 tsp. pumpkin pie spice
•1 cup sugar
•1?2 cup Beaufort Olive Oil
Blood Orange olive oil
•2 eggs room temperature
•1 cup canned pumpkin
•1 tsp. vanilla
•Powdered sugar for dusting

Heat oven to 380°F. Add your dry ingredients to a bowl and whisk.
Add your wet ingredients to a separate bowl and whisk until combined.
Add in your dry mix and, using a spatula, fold together until just incorporated.
Pour into a mini bundt pan tray (either silicone or oil-spritzed metal), all the way to the top and bake for 20-25 minutes.
Let cool on a rack then dust with powdered sugar. Enjoy!
