OYSTER ROAST TIPS

Our friends at Blue Ocean Market know fresh seafood! Our team gathered to learn from the best about one of our coastal chilly-weather favorites: oysters! With us being in the midst of oyster season, here are Blue Ocean's tips for how to host a roast like a pro. With Blue Ocean's help, our oyster roast turned out just right and we know yours will, too!

When selecting oysters for your upcoming roast, look for unbroken shells and avoid any that have hollow or rattling sounds. You also want to ensure there is a good smell – not rotten or sour. A smart question to ask: when were the oysters harvested? After five to seven days, the quality of the oyster begins to decline – the meat will not be as plump and juicy.

Folks enjoy oysters many different ways, including fried, steamed, grilled, etc. A simple preparation that is always delicious is popping the oysters on a hot grill until they open. While the oysters are cooking, place 2 tbsp. of salted butter with 1 tbsp. of lemon juice in a small bowl and microwave until the butter has melted. Dip the grilled oyster meat in the melted lemon butter and enjoy!

To discard empty oyster shells, find a local recycler and drop them off. Carteret Community College and the Coastal Federation are two of the many entities that provide this recycling service locally. Additionally, try crushing a few shells and put them around your fig trees – the figs will love the calcium in the shell!
